Also great was the burrata with smoked trout roe, cherry tomatoes, perilla salt, and grilled toast ($19). Approximately every restaurant in city serves some version of this delicate and gooey cheese, but this variation stood out with its oceanic flourish.
A long time in the past, Chef Tominaga baked these cream biscuits at Hart and the Hunter, and now they’re back at Manuela ($11). Served with Steen’s butter and Col. Newsom’s aged country ham, the biscuits have been as flaky and prosperous as ever.
The heftiest dish on the desk was the grass-fed beef tartare with capers, backyard garden greens, and garlic toast ($18) a easy take on a typical.
